Ingredients
- 100g mascarpone
- 50g Greek yogurt (full-fat works best)
- 25g icing sugar
- 2 tablespoons orange blossom water (don’t eyeball this)
- 1 meringue nest, roughly broken
- 3 apricots, diced (ripe but not mushy)
- 2 pieces Turkish delight, chopped small
- 25g almonds, roughly chopped
- 4 fresh mint leaves, finely sliced
Method
Step 1
Put the mascarpone, Greek yogurt, icing sugar, and orange blossom water into a large bowl. Whisk until thick and smooth — you’re aiming for a creamy texture that holds soft peaks, not something runny. If it looks loose, you didn’t whisk enough. If it goes grainy, you went too far. Stop the moment it thickens.
Step 2
Gently fold in the broken meringue, apricots, Turkish delight, almonds, and mint. Use a spatula, not a whisk. Stirring aggressively will crush the meringue into dust and turn everything soggy. You want visible chunks and contrast.
Step 3
Divide the mixture between two dessert glasses or bowls. Finish with a few extra mint slices on top if you want it to look intentional instead of dumped in. Serve immediately — waiting too long will soften the meringue.
Extra guidance that actually matters
- If your apricots are underripe, this dessert will taste flat. No fixing that later.
- Too much orange blossom water will make it taste like soap. Measure it.
- Want less sweetness? Cut the icing sugar slightly — don’t remove the Turkish delight unless you want to lose the point of the dish.
