Ingredients
- Cooking spray or a light drizzle of olive oil
- ½ cup plain Greek yogurt (low-fat or full-fat, as preferred)
- 3 tablespoons pesto (store-bought or homemade; basil or spinach pesto both work well)
- Kosher salt, to taste
- 1 lb spiralized zucchini (about 2 medium zucchini) or thinly sliced into matchsticks
- 2 tablespoons extra-virgin olive oil
- Freshly ground black pepper, to taste
- ½ cup grape or cherry tomatoes, halved (or use roasted bell peppers for a twist)
- 4 large eggs
- 2 teaspoons grated Parmesan cheese (or nutritional yeast for a dairy-free option)
- Fresh basil leaves, torn, for garnish

Step 1: Preheat oven to 425°F. Lightly spray a rimmed baking sheet with cooking spray.
Step 2: Grab a small bowl, stir together greek yogurt and pesto. Then season it with salt to taste.
Step 3: Now in a large bowl, toss spiralized zucchini with some olive oil, ½ tsp salt, and ¼ tsp pepper. From into 4 small (5 inch) nests on the prepared baking sheet. Add halved tomatoes on top.
Step 4: Now bake this for 5 minutes, then remove it from the oven, and make a small well in each nest. And add a spoonful of pesto-yogurt. Crack an egg into each well. At last, season with some salt and pepper.
Step 5: Last bake for 10-12 more minutes, until your eggs are just set. Finally, garnish with parmesan and fresh basil before serving.
