It’s been very frustrating when you are late and still trying to decide what to eat. No worries, these quick egg muffin tins are portable, customizable, and perfect for meal prep.

You can choose and fill them with your favorite veggies, cheese, and meats. This makes this recipe a versatile option to carry the taste you want.

Also, this is really good in MACROS as well. Each muffin has 72 with a 5 grams of protein. You can prep in a batch on Sunday, and you’ll have a ready, healthy breakfast.

Ingredients

  1. Cooking spray or coconut oil (for muffin tin)
  2. 3 slices of turkey bacon
  3. 1 red bell pepper, finely chopped (about 1 cup)
  4. 1 small yellow onion, finely chopped (about ¾ cup)
  5. 2 oz baby spinach, chopped
  6. 6 large eggs
  7. ¼ cup whole milk
  8. ½ tsp garlic powder
  9. ¼ tsp paprika
  10. Kosher salt & black pepper, to taste
  11. ½ cup shredded mozzarella

Step 1. Preheat your oven to 350°F and grease a 12-cup muffin tin.

Step 2. Cook the bacon in a skillet until crispy, and crumble it.

Step 3. In the same pan, saute pepper and onion (around 7 mins), add spinach, and cook it until wilted (2 mins).

Step 4. Whisk your eggs, milk, garlic powder, paprika, onion, salt, and pepper. Stir in veggies, bacon, and cheese.

Step 5. Now pour it into muffin cups (¾ full)

Step 6. Just bake them for around 15-17 mins, until they get golden and set. Cool slightly, then refrigerate in an airtight container.
