Ingredients

  • 2 medium starchy potatoes (baked or boiled, then cooled)
  • 1 cup full-fat cottage cheese (drained if watery)
  • 2 egg yolks
  • 1/2 cup finely grated hard cheese (Parmesan or similar)
  • 1 cup plain flour (plus extra for dusting)
  • 1 tsp salt
  • Pinch of nutmeg (optional but recommended)
  • Black pepper to taste
  • Butter or olive oil (for finishing)

Method

Step 1
Start by removing excess moisture from the cottage cheese. Let it sit in a sieve or press it lightly—skip this, and your dough will be too wet to handle properly.

Step 2
Cook the potatoes until tender, then peel and mash or grate them while still warm. Avoid overworking them—this is where most people mess up and end up with dense gnocchi.

Combine potatoes, cottage cheese, egg yolks, grated cheese, salt, pepper, and nutmeg in a bowl. Mix gently until just combined, then add flour gradually until a soft dough forms.
