Ingredients

  • Cooking spray or olive oil, for greasing
  • 12 slices of deli-style ham (round or square, not too thin)
  • 1 cup shredded cheddar cheese (or a cheese blend)
  • 12 large eggs
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley or chives, for garnish (optional)

Directions

Step 1: Start the dish by preheating your oven to 400°F (200°C). Now lightly grease a 12-cup muffin tin with cooking spray or a little olive oil. Press a slice of ham into each muffin cup, forming a little bowl. Sprinkle a bit of shredded cheese into each.

Step 2: Crack one egg into each ham-and-cheese cup. Season with a pinch of salt and freshly ground black pepper.

Step 3: Bake for 12–15 minutes, depending on your preferred yolk consistency (12 minutes for soft yolks, 15 for firm).

Step 4: Remove from oven, garnish with chopped parsley or chives if desired, and serve warm—or let cool and store for a quick, protein-packed breakfast all week.
