Ingredients

For the Chicken

  • Cooking spray or olive oil spray
  • ½ cup blanched almond flour
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 tbsp mayonnaise
  • 2 tbsp water
  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

For the Waffles

  • 4 large eggs
  • 2 cups almond flour
  • 1 cup shredded sharp cheddar
  • 1 cup unsweetened almond milk
  • 1 cup full-fat sour cream
  • 1 tsp baking powder
  • Kosher salt and pepper, to taste
  • Cooking spray
  • 2 tbsp chopped chives, for garnish
  • Butter, for serving (optional)

Directions

Step 1. Heat the oven to 420°F. Line a baking sheet with parchment and coat with spray.

Step 2: Mix the almond flour and paresan in a shallow bowl.

Step 3: Now take a separate bowl, whisk eggs, mayo, and water. Then season them with salt and pepper.

Step 4: Dip your chicken strips into egg mixture, then coat them in almond-parmesan mix. Place on baking sheet.

Step 5: Now let it bake for 25-30 minutes or until golden and crisp.

Step 6: Meanwhile, preheat the waffle iron. In a bowl, mix eggs, almond flour, cheese, almond milk, sour cream, baking powder, and some salt and pepper.

Step 7: Grease the waffle iron. Pour ½ cup batter and cook each waffle until it gets golden, it will take around 4-5 minutes.

Step 8: Now the wait is over. Serve your chicken over waffles and enjoy your food. Uh, top with chives and butter if desired.
