Ingredients
- ½ cup almond flour (or coconut flour for variation)
- 4 oz cream cheese, softened
- 4 large eggs
- 1 tsp lemon zest
- Butter, for frying and serving

- Take a bowl, whisk together almond flour, cream cheese, eggs, and lemon zest until smooth.
- Heat the non-stick skillet over medium-low, and melt 1 tbsp butter.
- Pour ~3 tbsp batter from each pancake. Cook for 2 mins per side, until it gets golden.
- Repeat the process with the remaining batter, and serve it with butter or sugar-free syrup
